The weather is starting to warm up (24 degrees Celsius yesterday!) and I can feel Spring starting to make itself known. I am the sort of person who very much eats according to the weather. I love nothing more than hot, slow cooked meals in the winter, and tend towards salad and BBQ meals in the warmer months. Cakes of course are for year-round eating 🙂
These are a couple of salads that are on regular rotation in the Seltzer household as the weather hots up…
Roasted Sweet Potato Salad with Feta
It’s so simple, but so delicious. I eat it with BBQ chicken for lunch, or a steak for dinner. Roasted sweet potato, rocket, roasted red capsicum, olives and feta is a winning combo in my books, and the hardest part of this recipe is actually peeling, chopping and roasting the sweet potato. Once that’s done you’ve got a fresh and colourful salad to tempt your tastebuds.
Lettuce, cucumber, tomatoes, olive, feta, oregano…an absolute classic. This salad is a staple in our household, and I add tuna for protein. I have this for lunch at least a couple of times a week in the warmer months, and it takes a while for me to tire of it.
How amazing does this look! Roasted chickpeas and a good pecorino cheese really make this salad. If you can find colourful pasta like this, it really does jazz up what could be a pretty boring-looking salad.
